René Redzepi, (born December 16, 1977, Copenhagen, Denmark), Danish chef acknowledged internationally for his distinctive reinterpretation of Scandinavian delicacies; his recipes are characterised by distinctly Nordic regionally sourced substances.
Redzepi’s father was a Muslim immigrant from the Macedonian area of Yugoslavia who moved to Copenhagen and married a Danish girl. Redzepi later claimed that household visits to his father’s kinfolk in Yugoslavia triggered his curiosity in foraging for indigenous edibles. At age 15 he enrolled in culinary faculty, after which he grew to become an apprentice at a Michelin Guide-starred French restaurant in Copenhagen.
